I’m not sure how to describe this, other than it is very tasty. It’s not a quiche, and it isn’t really a pie…make it yourself and let me know what you think
You’ll need:
-One pie crust (come on, just get the ready made kind by Pillsbury)
-1/2 c. + a handful of Cheddar or mozzerella cheese
-4 plum tomatoes
-1/2 c. mayo (get the low fat kind!)
-1/2 c. parmesan cheese
-1 c. loosely packed fresh basil
-1 bunch scallions
-Optional: fresh parsley and garlic
Preheat the oven to 325 degrees. Put the pie crust in your pie pan and bake for 6 minutes. Take the pic crust and layer with a handful of the cheddar or mozzerella cheese so that it starts to melt (to aid in the melting you can cover the crust with a lid or plate). Slice up your tomatoes and pat them dry with a paper towel (they don’t have to be dry, just not as gushy as they would normally be). Layer the tomatoes on top of the cheese. In a small bowl, mix mayo, cheddar cheese, parm, basil, scallions, and the parsley and garlic if you like. This mixture will be pretty think at this point. Use a spoon to drop into the pie, spread it out. Bake for 40 minutes and voila! You’ll have a tasty, cheesey pie!
*I had to make this recipe without fresh basil because it wasn’t available. You can use the spice, just slowly add it and make sure you don’t over do it.

I know I say my recipes are simple, but really…
You’ll need:
-1 can refried beans
-1 jar salsa or taco sauce
-1 package Velveeta (the medium sized box…it you’re lucky your grocery store will have the “Mexican Mild” kind, def get that if you can but it’s hard to find)
-1 container sour cream
-1 bag of tortilla chips (my favorite are Santitas)
This recipe all goes in the microwave, believe it or not. Take the can of beans and spread them in the bottom of a 9-inch pie plate, or whatever sort of pan you might have that will fit in the microwave. Pour the salsa or taco sauce over the beans. Next, cube your Velveeta and throw on top of the dip. Place the chips around the outside of the dish, just to make it look cool. Microwave about 2-3 minutes, or until your cheese is melted. Eat! This is an easy party hit, I promise, and no one will know it took you ten minutes.

A friend gave me this recipe and it’s a great side or appetizer to have. It does take some additional planning because the tucks need to be refrigerated for at least 8 hours. It might sound like a weird recipe, but just give it a try and you’ll be happy.
You’ll need:
-10 6-inch flour tortillas
-2 packages (8 oz) cream cheese
-9 oz cheddar or mozzarella cheese
-2 c. bottled salsa (whatever kind you like)
-5-6 green onions, chopped
-1 ripe avocado
-Anything else you might want to toss on (olives, onion, peppers, etc)
First things first, take out the cream cheese about 45 minutes before you start to let it soften up. Next, chop up your green onions and whatever other veggies you might be using. Core the avocado and mash it up a bit so it’s similar to guacamole. Take your tortillas and toss them in the microwave for 15 seconds (this softens them up and they’ll be a little easier to work with). Lay the tortilla out on a flat surface and spread with a layer of cream cheese, sprinkle with regular cheese, layer salsa, avocado, and other veggies on top. At this point your tortilla should look similar to a pizza. Roll the tortilla up like you would a poster and place in a dish (even though these aren’t cooked I would suggest very lightly spraying the pan so they don’t stick). Repeat for all the resy, cover in plastic wrap, and let refrigerate overnight. Slice them up into 1-inch pieces and serve at your next party!
