Tortilla Tucks

A friend gave me this recipe and it’s a great side or appetizer to have. It does take some additional planning because the tucks need to be refrigerated for at least 8 hours. It might sound like a weird recipe, but just give it a try and you’ll be happy.

You’ll need:

-10 6-inch flour tortillas

-2 packages (8 oz) cream cheese

-9 oz cheddar or mozzarella cheese

-2 c. bottled salsa (whatever kind you like)

-5-6 green onions, chopped

-1 ripe avocado

-Anything else you might want to toss on (olives, onion, peppers, etc)

First things first, take out the cream cheese about 45 minutes before you start to let it soften up. Next, chop up your green onions and whatever other veggies you might be using. Core the avocado and mash it up a bit so it’s similar to guacamole. Take your tortillas and toss them in the microwave for 15 seconds (this softens them up and they’ll be a little easier to work with). Lay the tortilla out on a flat surface and spread with a layer of cream cheese, sprinkle with regular cheese, layer salsa, avocado, and other veggies on top. At this point your tortilla should look similar to a pizza. Roll the tortilla up like you would a poster and place in a dish (even though these aren’t cooked I would suggest very lightly spraying the pan so they don’t stick). Repeat for all the resy, cover in plastic wrap, and let refrigerate overnight. Slice them up into 1-inch pieces and serve at your next party!
