Mac ‘N Cheese Muffins

Posted by: Kayla on: September 26, 2009

Hannaford’s Fresh magazine has a lot of great recipes and this mac and cheese muffin recipe I got from it a while ago has been a hit. I’ve added a few spices but kept everything the same.

-1/2 c. finely chopped onion (I suggest white for this recipe, but you can pick your favorite if you want)
-1 large [...]

You’ll need:
-10 6-inch flour tortillas
-2 packages [...]

-3 Tb vegetable oil…or whatever oil you prefer
-Salt and pepper
-Any kind of seasoning you like
First, preheat the oven to 400 degrees. While the oven preheats, slice up the potatoes. The easiest way to do this would be with a mandolin slicer, [...]
