Eggplant Parm for the Quick ‘N Durrty

Eggplant parmesan can be as easy or complicated as you want it to be. Here I give you the simple parm for the everyday college student, or anyone looking for a quick tasty meal. 
You’ll need:
-Eggplant (probably one large will do it, or two small)
-One egg
-Italian bread crumbs, about a cup
-Mozzerella cheese, about a cup

This semester WNYF produced four episodes of Foodonia, all of which you can find here! I hope you can tune in and enjoy…
Episode Overview:
Episode One-Panini’s/homemade potato chips
Episode Two-Tortilla Tucks/Bean Dip
Episode Three- Thanksgiving themed
Episode Four- Christmas themed
There’s also a cute little promo on there that we will be using to advertise to campus!
