Taco Pizza

People like this, so make it. I typically serve as a side or appetizer, but could be made into a main meal quite easily.

You’ll need:

1 can refried beans (come on, get Goya– they’re the best)

1 pizza dough (homemade, frozen, packaged kind…I don’t care)

1 small bag shredded taco or Mexican cheese

1 1/2 cups shredded lettuce

1 cup crushed nacho chips

1/2 jalapeno pepper, diced up real small (take out the seeds for less heat, or don’t add at all)

2-3 scallions, cut up

1/3 cup red bell pepper, diced

1 cup sour cream

Or whatever toppings you prefer. Most meat eaters would throw some cooked ground beef on top.

Prep your dough. Preheat the oven for whatever temp is recommended on the package- same goes for cooking. Cook time depends on directions.

Use a spatula to put the refried beans on the dough first (do not heat up, that’s what the oven is for). Sprinkle with lettuce and then the cheese. Add toppings (chips, pepper, scallions, etc). Sprinkle on some taco sauce if you like for flavor and color.

Again, bake according to dough instructions. When done, allow to cool for a few minutes and then add a spoonful of sour cream in the middle. Serve with additional sour cream.
