Garlic & Herb pumpkin seeds

AHHHH DO NOT TOSS YOUR PUMPKIN SEEDSSSSSS!

I can’t stress this enough. You have already bought the pumpkin and carved it, this is a free bonus (and pumpkin seeds themselves are actually pretty good for you). You can likely make these with ingredients you already have in your house.

 

You’ll need:

About 3 cups dried pumpkin seeds (let them air dry overnight on a cookie sheet)

4 Tb melted butter

1/2 to 1 tsp salt (depends on your own liking)

2 cloves garlic

1/2 Tb basil

1/2 tsp oregano

1/2 tsp pepper

Preheat your oven to 350 degrees. Put your pumpkin seeds into a medium sized bowl and drizzle the butter over them. Mix. Add salt, pepper, and herbs and mix well. Spread onto a cookie sheet, trying not to overlap the seeds as best as possible. Optional: lightly sprinkle more salt.

Bake in the oven for about 15 minutes, then use a spatula to mix/flip them, bake an additional 15 minutes. Ready when lightly browned. Cool a little, but eating them warm is the best way to go!

Store in an air tight container.

    Great post Kayla. I love pumpkin seeds but never did this recipe. I will be trying your recipe over the weekend.
